Welcome to my grilled shrimp recipes! I love shrimp, especially grilled whether they are prepared on a skewer like shish kebabs or placed straight on the grill. I also like to use various types of seasonings and spices, just to add a variety of flavors. Shrimp is great to make during the busy weeknights. It takes literally minutes to make. This is a must try recipe! It is very easy to make and it is full of flavor! If you love smokey and spicy flavors, you will love this recipe! I made this dish on a busy weeknight and it took me less than half an hour, and that includes the marinade time! This recipe is also great because it has minimal ingredients. If you do not want to serve this with couscous, simply substitute a healthy salad, rice or pasta!

To prepare this dish, start by preheating the grill and marinading the shrimp. Place the peeled and deveined shrimp in a bowl. To save on prep time, you can purchase some that has already been peeled and deveined. Otherwise, add another 5-10 minutes to your prep/cook time. Next, pour about 1/4 of the extra virgin olive oil on top and follow up by adding the paprika, cumin, and salt. Mix well and put aside. I recommend to marinade for at least 15 minutes.
For the Couscous:
Chop 1/2 of the onion for the couscous. In a small saucepan, add about a tablespoon (or more) of butter. I usually add a bit more since I love the buttery taste. Once the butter melts, add the chopped onions and cook until soft, not caramelized. Once the onion is cooked, add the couscous and 1 cup of water. Bring to a boil and add some salt. Cover and remove from heat for about 5 minutes or until done. Just as you would with rice, fluff the couscous with a fork to avoid smashing the grain.
While you are waiting for the couscous to cook, place the shrimp on the grill and cook for about 5 minutes (couple minutes per side) or until done.
If you are looking for a recipe without all the spices, My basic grilled shrimp recipe is a great alternative! It tastes just as good and is just as versatile. Serve it with a side of rice or a healthy salad!

Place the shrimp on skewers making sure to not over crowd them. For each skewer I placed about 4 and that seemed to work well.
Place the skewers on the grill and cook for about 2 minutes a side.
