Welcome to my collection of Quinoa Bowl Recipes! If you google this term, you will see a trend of this new and popular dish. If you are not familiar with this type of recipes you are probably wondering why it is setting such a trend. Basically, these dishes are all very healthy as quinoa has a lot of known health benefits (read more about it here).
Quinoa is not only healthy, it is very light and delicious. It's so versatile, you can serve it for breakfast, lunch or dinner! What's different about these recipes than some of my other quinoa dishes is that it is not a side dish. The recipes below are main course dishes, so no need to make an elaborate dinner when you can make a healthy, quick and easy quinoa bowl recipe!
The roasted sweet potatoes, along with the roasted broccoli and fried egg make this a very hearty meal! It was the only item on the dinner menu as it has all the nutrition you need, including protein. If you are looking to reduce cholesterol or do not like eggs, you can omit the fried egg from this recipe.

To prepare this dish:
Preheat the oven to 400 degrees. Wash and slice the sweet potatoes and broccoli, place in a bowl. Drizzle extra virgin olive oil, just enough to coat the vegetables, then add salt to taste. Place the veggies on a cookie sheet and spread apart so they can cook evenly. Place in the oven and cook for about 25 minutes or until done.
While the vegetables are roasting, start the quinoa. Add 2 cups of water in a pot, set to high and wait for it to boil. Once it boils, add the 1 cup of quinoa, reduce the heat to low and cover. Cook until done.
Once the quinoa is done, monitor the cook time for the vegetables and take them out of the oven if done. In a pan, add a little bit of butter and crack the eggs and fry them.
Grab a bowl, add the quinoa, top with roasted veggies, then the fried egg.
