Shrimp Stir-Fry with Brussels Sprouts

Love this shrimp stir-fry with brussels sprouts recipe! It has minimal ingredients and can be made in 30 minutes! It's perfect for busy weeknights. Shopping Tips

I always look for grocery store deals on shrimp before purchasing them. Most of the local grocers around my area will have shrimp on sale at one point during the week. I usually try to purchase the larger shrimp that has been cleaned and deveined. This will save you tons of time when prepping for this meal. The veggies I chose for this recipe was also on sale, so just check out your weekly grocery circulars for the discounted items and put it together as a stir-fry. You can add whatever veggies you want. I also purchased a stir-fry seasoning packet to save time and money as I did not have to go and buy tons of spices or soy sauce. 


Equipment

You can use a really large skillet if you do not have a wok. I purchased a wok at my local Asian market that has worked really well. If you do not have any local Asian markets, you can go on-line to this affiliate website (click on link below) to check out their deals and what they have in stock:

You will need the following for this Shrimp Stir-Fry with Brussels Sprouts:


Ingredients

Prep Time: 5 Minutes (Cook and Chop Veggies)

Cook Time: 30 Minutes (Includes Rice)

Serves: 2-3 people

  • 1 lb. Shrimp
  • 9 oz. Brussels Sprouts, Sliced in Half
  • 10 oz. Italian Squash
  • 1/2 Onion, Thinly Sliced
  • 1 Red Bell Pepper, Sliced
  • 1 Small Napa Cabbage, Cut into Strips
  • 1 1/2 Cups of Rice
  • 1 Veggie Stir-Fry Packet 
  • 1-2 Tablespoons of Cooking Oil

Add additional packet for extra seasoning


Preparation

To prepare this shrimp stir-fry with brussels sprouts dish, get the rice going since that will take the longest to cook, about 20 minutes. I used Jasmine rice, but you can use whatever rice you have in stock. If you did not purchase cleaned and deveined shrimp, you'll need to prepare them at this stage of the cooking process, then set aside. I recommend pat drying them with a towel.

About 10 minutes into the rice cooking, clean and chop/slice all of the veggies you will be using for this recipe. If you have never stir-fried before, it's such a quick cooking process that everything should be ready to go. Once all the veggies have been washed, chopped or sliced, put them aside and then get the wok ready. Preheat the wok on high heat. The best way to stir-fry is to cook on high heat. 

Once the wok is ready, add some cooking oil (I usually use vegetable oil), then add the shrimp. Depending on the size of the shrimp cook for up to 2 minutes per side. Do not overcook them. Once they turn pink, they are ready. Set aside.

Add more oil, if needed, then add the brussels sprouts and stir-fry for about 5 minutes, then add the bell peppers, and Napa cabbage. Cook for another 5 minutes. Add the shrimp, the packet (sauce) and mix. 


Serve

Serve this dish immediately as-is or on top of Jasmine rice. This can be made for lunch or dinner.
