Baked Chicken in Avocado Boat

Try this exotic baked chicken in avocado recipe. It is a creative chicken dish that is very easy to prepare, but looks so gourmet!  Avocados are usually used in salads, soups and sandwiches, but rarely as part of the main course. They grow best in warm climates, so availability is those areas are year-round. Otherwise, they can be found in stores Spring to Fall seasons. Avocados are also known to be high in fat, but it has the good "fat" we all need. They are also known to have a lot of health benefits such as regulating blood sugar, having anti-inflammatory properties and more.

You will need the following for this Baked Chicken in Avocado Boat Recipe:

  • 2 chicken breast meat diced 
  •  1/3 cup whiskey 
  •  medium size white onion thinly sliced 
  •  2 tb butter 
  •  2 large avocados half lengthwise 
  •  2 cups thinly sliced cabbage 
  •  1 tb lemon juice 
  • 3 tb oyster sauce 
  •  5 shallots thinly sliced 

This dish is perfect to serve for brunch or dinner. You can serve it with a healthy salad.

To prepare this dish, start by preheating the oven at 350 degrees F/175 degrees C. Fried shallots till golden brown. Drain all the oil and set aside.  Place diced chicken meat in a baking dish, season with salt and pepper and add whiskey.  Mix well and then spread out diced chicken meat evenly and top with sliced onion. Dot the the dish with butter. Bake for 30 minutes.  

Half lengthwise the avacados and discard the skin. Slice a little off the bottom of the avocado so that it can stand nicely on the plate.  Gently rub avacados with lemon juice and place cut side up in the serving plates. Scoop out the center of the avacados to make a deeper recess to hold the chicken meat.  Take out baked chicken from the oven after 30 mins and add oysters sauce and fried shallots.  Fill avocadoes with chicken meat and served with cabbage.
