Try this Baked Salmon recipe for a quick and easy weeknight meal. It has minimal ingredients and can be prepared and cooked in under 30 minutes. This is a versatile dish that can be served for brunch, lunch or dinner, along with some pasta, rice or a salad. This recipe calls for Salmon fillets, about 6 oz each. You can easily find them in most grocery stores already filleted; 6 oz seems to be the standard size.
Just keep in mind that filleted Salmon may cost more than buying a non-filleted Salmon. If you are really on a tight budget or just want to save extra money, purchase the non-filleted Salmon and fillet it yourself. It will take you more time to prepare this dish, but it may be worth it to save a few extra dollars.
Money Saving Tip: Check out your local grocery circulars for deals on fresh Salmon. Most grocers will have deals on filleted Salmon throughout the year.
1) Pre-heat oven to 350 degrees F. While you are waiting for the oven to warm, lightly brush each side of the salmon with extra virgin olive oil.
2) Salt both sides and add your choice of spices and herbs. I usually just use salt and maybe some pepper. If I add any herbs, it's usually Thyme, Rosemary or some Marjoram, depending on what my side dishes will be. Whether you decide to just salt or add other spices and herbs, keep in mind that seafood is delicate and tastes best with its natural flavor so don't overdo it with the spices.
3) Place it in the oven and bake until done. This takes approximately 20-25 minutes depending on the size of the Salmon. Be careful to not overcook.
Cooking Tip: If you want to save time on cooking or clean up, add vegetables straight to this dish e.g. roasted asparagus, or other type of vegetable that will cook in 20-25 minutes. Just place those in the casserole dish along side the salmon!
