Spicy Beef Fajitas cooked with red and green bell peppers, lots of cumin and cayenne pepper! This is a great recipe for beginner cooks. It's basic and uses minimal ingredients. I did not follow any recipe for this dish. I just threw a few ingredients together that I have seen in similar recipes and came up with this version.
You can purchase the beef already sliced, but it will cost a lot more. A more affordable option would be to purchase a low cost meat such as a London Broil and slice it up yourself. It makes a huge difference in price. There are times I've purchased it already sliced, but it was on markdown at the store. I always look for markdown items and make that dish the same day.
For the produce i.e. red and green bell peppers, I look for the store deals as well. I find that the yellow and red bell peppers are always more pricey than the green ones. If you are having a hard time finding yellow and red bell peppers on sale, then make this entire dish with the green ones as they tend to me on sale more often.
For Purchasing: Since you are using fresh produce, I would make this meal a day or two after purchase. The meat is easy to store as you can freeze any leftovers. Also, for the spices, you can go through the grocery isle to find a packet of seasoning made specifically for this dish or you can throw your own spices together.
For Cleaning: If you are a beginner cook, make sure to wash all produce thoroughly and to discard the inner seeds from the bell peppers.
Cooking Tip: If you plan to serve this with side dishes, I would recommend preparing those first as this dish does not take long to make. If you want to add extra ingredients to this dish, you can add some mushrooms and other colored bell peppers.
To prepare this dish, start by pre-heating a skillet. You will need to make sure the pan is very hot as the cooking time is very minimal, otherwise, the vegetables will not cook through. While the skillet is pre-heating, season the sliced beef with salt and pepper. Wash and slice the onions, red bell peppers and green bell peppers, then set aside. Make sure that whatever veggies and other ingredients you plan to use for this dish is ready to go.
Make sure that when you are slicing up the veggies, you slice them evenly and on the thinner side. This will ensure that they will cook faster and will cook at the same pace.
Once the skillet is hot, add the peppers and onions, cook for about 6 minutes, constantly stirring. Add some salt. Add the beef strips. Cook until done. The entire meal should be cooked within 10-15 minutes. If you choose to have rice with this meal, add another 10 minutes to the cook time of the overall dish.
Serve hot as a main dish. This meal can be served for lunch or dinner. You can also make it a breakfast dish by adding scrambled eggs to it.
Place the beef fajitas in corn or flour tortillas or serve with side of rice. You can add a dollop of sour cream and serve with corn on the cob.
