This chickpea rice recipe is a variation of a Turkish rice recipe using garbanzo beans. If you are looking for ways to add more protein into your diet without eating meat, then try this recipe! This recipe uses canned beans so it is a quick and simple dish. You basically cook the rice as you normally would and just add the can of beans. That is it. Very basic, but adds flavor and variety to your rice, especially if you were getting bored of plain white rice. If desired, you can add additional protein to this dish, such as strips of beef or chicken, thus turning this side dish into a main course.

You will need the following for this dish:

  • 1 C. Rice
  • 3 T. Butter
  • 14.5 oz. Can Garbanzo Beans or Chickpeas
  • 1 1/2 C. Water
  • Salt to Taste; Pepper is optional

To prepare this dish, start by melting butter in a saucepan. Once the butter melts, add the rice and stir for about 1-2 minutes. This will lightly toast the rice. Then, add the garbanzo beans and the water. Add salt and cook for about 20 minutes or until done.

If you prefer to use the dried beans instead, you will need to soak it overnight and the cook time is about 45 minutes to an hour.
