Try this basic Dover Sole recipe! It is a perfect week day meal as it can be prepared and cooked in under 30 minutes! It's an affordable type of fish and can be found in most grocery stores. If you are not familiar with Dover Sole, it is part of the Flounder family. It has a very mild flavor and it is versatile as you can add any type of spices to it. It can be baked, fried, grilled or poached. You can buy it whole or as a fillet, although, you'll probably need to go to a specialty fish store to buy it whole. Most grocery stores sell it already filleted. As with any seafood dish, try not to overuse any spices which will overpower the fish flavor.
For this recipe I used fresh Tarragon. If you choose not to use Tarragon, you can substitute other herbs such as Thyme, Rosemary, Fennel, Oregano, Sage or Dill. I've used each of these before with this fish. The base flavor of the fish will be the same, as long as the herbs are used in moderation. Using herbs or other types of spices should just add a hint of flavor.

To prepare this dish, start by pre-heating the oven to 350 degrees F. While the oven is pre-heating, brush the Dover Sole fillets with extra virgin olive oil, then season them with salt, pepper, and Tarragon on both sides. Bake for 20 minutes or until done.
*To serve: Drizzle lemon juice on top. You can serve it with pasta or rice!
