This Garlic Broccoli Recipe is a garlic lovers dream! It is a quick and easy recipe for any busy week night. You can adjust the amount depending on your preference. This recipe is mainly used as a side dish and it is very affordable. You can add spices to it as you wish, but I usually just add raw chopped garlic and salt to taste. I got this recipe from my mom and have used it for years. You can substitute it with asparagus and it tastes just as good. It tastes best when it is either steamed or boiled. This dish can be used in either spring, summer, fall and winter months and pairs well with most main course dishes.
To prepare this dish, start by boiling water in a large pot. As you are waiting for the water to boil, wash and trim the vegetable. You will need to chop off the hard, large stump. Once the water has boiled, place it in the pot and reduce the temperature to medium. Cook for about 5-7 minutes. It should still be firm and not overcooked. Drain in a colander and place it under cold running water for about a minute. This will keep it from cooking any further. Once this is done, put it off to the side and let it cool.
While you are waiting for it to cool, grab about 4-5 garlic cloves. You can use more or less depending on your preference. You can either dice or chop it up or use a mortar to smash it up. If you choose this method, make sure to add a little bit of salt in the mortar before smashing into a paste. Place the cooled broccoli in a serving dish and add the garlic paste on it. You will need to spread the paste or chopped garlic on the broccoli. For the final step, drizzle a little bit of extra virgin olive oil over it and then serve!
