mango salad

Try this mango salad! I had a few ingredients on hand and decided to combine them creating a salad using black beans. The flavors went well together and since have been making this salad pairing it with certain dishes. it goes great with Mexican cuisine such as burritos, tacos, enchiladas and other similar dishes. This salad also goes well with various seafood dishes. I typically make this dish during the summer months, but you can make this anytime of year as long as mangos are available.

You will need the following for this dish:

  • 1  14.5 oz. Can of Black Beans
  • 1 Mango- Washed, Peeled, and Cut into Cubes
  • 1 Avocado-Cut into Cubes
  • Cilantro, Chopped
  • 1-2 Limes
  • Salt to Taste

Don't like black beans? Substitute pinto beans, or red kidney beans!

To prepare this dish, start by cutting up the mango and avocado. Then, chop the cilantro. In a salad bowl, add the black beans, mango, avocado, cilantro and lime juice. Salt to taste. It's just that easy!

You can serve this salad with any type of chicken, beef or seafood

how to cut a mango

If you are unfamiliar with Mangos, you will need to know how to cut and prepare them for the salad. The seed of the mango is in the center of the fruit and it is one long, thick seed. Cut about 1/4 inches from the middle on both sides. This will remove the flesh from the seed and you will end up with two separate mango with skin in tact. On the flesh, cut parallel into the flesh creating a check board pattern. Turn it inside out and scoop out the mango pieces with a spoon. This creates diced mango slices.
