Pork Burritos

This is a great Pork Burritos recipe made from using a roast pork shoulder in a slow cooker. It is perfect for busy weeknights and those beginner cooks wanting to try a new recipe. Not only does this recipe have minimal ingredients, this overall dish is very affordable. Most local grocery stores will have deals on pork roast, so make sure to read the weekly circulars for the sales. They can also be frozen, so if there are sales on it, make sure to grab a few and freeze them for future use. This recipe is made for 1-2 people, so you will need to adjust the amount of ingredients needed depending on how many people you will be serving.





You will need the following for this Pork Burritos Recipe:

Crockpot


Ingredients:

  • 1-2 Ibs. Pork Roast
  • 1-15oz. can Black Beans
  • 1 Green Bell Pepper-cut into strips
  • 1-2 Diced Jalapeños
  • 1 Medium Onion-Chopped
  • 1 T. Chili Powder
  • Salt and Pepper- Use as much or little as desired
  • 1 T. Cumin
  • 1 Medium Tomato-Chopped
  • Hot Sauce (optional)
  • Avocados (optional)
  • Flour Tortillas

Preparation:

To prepare this dish, start by seasoning both sides of the roast with cumin, salt, pepper and chili powder. If you really love these spices, you can add more than what is suggested in this recipe. Once it is seasoned, place the roast in the crockpot, along with the black beans (liquid drained), green bell pepper strips and the tomatoes. Place the cover on the crockpot and set the setting to low. Cook for 8 hours. Once cooked, the pork will be so tender that you can easily shred it with a fork.


Serve:

Serve it hot. You can serve it as a pork burrito dish by shredding the pork and placing it in a tortilla. Then add all of your favorite condiments, including the hot sauce. The ingredients listed are just suggestions. You can add whatever your favorite ingredients are in burritos. If you do not like avocados, you can omit that altogether and substitute hummus instead.

If you do not want to serve this dish as suggested, you can omit the tortillas and substitute rice. You can serve it alongside a salad or some vegetables.

If you decide to omit the burritos portion of this recipe, add carrots, celery and potatoes in the crockpot instead.

Pork roasts are so versatile, you can turn it into any dish you like. Its great to serve for guests as a buffet style meal. Just have small tortillas out and your guests can make their own burritos.
