This is a simple, healthy pork tenderloin recipe. It uses a 1.5 pounds of tenderloin just enough for two. It also uses minimal ingredients and can be prepared and cooked in 30 minutes. If you are not familiar with pork tenderloin, it is a cut of meat near the spine. It is long and cylinder in shape. What's great about pork tenderloin is that you can "dress it up" or "dress it down". My recipe is definitely a "less is more" version for a more casual meal, but yet, it can be fancied up using sauces for a more elegant meal. This cut of pork can be found in most local grocery stores and can be served any time of year. It is a very lean cut of meat so you will need to serve it with side dishes like glazed carrots, creamy potatoes, or salads. For this recipe, it was served with rice and curried chick peas.

To prepare this dish, start by pre-heating the oven to 425 degrees. Season the tenderloin with salt, pepper and rosemary. Place in oven and cook for 30 minutes or until done.
To serve, slice about 1/4-1/2 inches, plate along side some vegetables, rice or salad. For this recipe, it was served with rice and curried chick peas.
