You will need the following for this dish:

  • 1 C. Red Lentils
  • 3 T. Butter
  • 1 Medium Onion, Diced
  • 1 tsp. Tomato Paste
  • 4 C. Water
  • Salt, Red Pepper Flakes and Dry or Fresh Mint to Taste

Can't find red lentils at your local store? Try a specialty store or a Middle Eastern Grocery

To prepare this dish, start by washing and draining the red lentils. In a  saucepan, melt the butter and add the diced onions. Cook until the onions are translucent. Add the tomato paste, stir, then add the water and red lentils. Bring to a boil, then cook on low for about 40 minutes or until the lentils are soft. Add the salt, red pepper flakes, and mint to taste.

Depending on your preference, if you like a smoother soup you can puree it in the blender.
