This Roasted Asparagus Recipe with Cherry Tomatoes is the best!  It is an easy, yet an elegant vegetable that is a perfect side dish for just about any main course of your choosing. It only takes 25 minutes to roast, so its perfect to make for those busy weeknights. My favorite method of cooking asparagus is to roast them;  it seems to bring out the natural sweetness and nutty taste. Depending on the time of year, the pricing for asparagus can range from inexpensive to expensive. I recommend you look for your local store deals. 

The best time of year to find asparagus is during the Spring months starting in April. Although you can find it in grocery stores throughout the year, during the prime time months is when you'll be able to get the best flavor for this vegetable, not to mention a better price! Aside from roasting, there are many other ways to prepare asparagus. You can simply blanch, grill or steam them!

You will need the following for this Roasted Asparagus Recipe w/Cherry Tomatoes:

  • Asparagus
  • Cherry Tomatoes
  • Salt
  • Pepper
  • Olive Oil
  • Fresh Rosemary


To prepare this roasted asparagus recipe, start by preheating the oven for 400 degrees F. Wash the cherry tomatoes and the asparagus. To clean up the asparagus, you will need to snap off the hard stems. Or, you can simply line them up and cut off about 1/2 inch to an inch off the bottom. Place the asparagus and the cherry tomatoes in a casserole dish. Drizzle with extra virgin olive oil. Generously season the asparagus and cherry tomatoes with salt, pepper and fresh rosemary. Place them in the oven and roast for 25 minutes. 

Once done, place the roasted asparagus and tomatoes on a plate and add salt, pepper and fresh rosemary. This is optional if you want extra flavor.

Depending on how "roasted" you like your vegetables, you can leave them in the oven for a bit longer if you prefer a crispier taste. If you do not want the vegetables to get overcooked, you can take them out of the oven around 10-15 minutes. Its up to you!
