Romaine Salad w/tomatoes & carrots


This Romaine salad with tomatoes and carrots recipe is one of the most basic salads you can make. It is a perfect salad for those busy weeknights!  If you want to incorporate more salads into your diet, but do not know where to start, try using Romaine lettuce. 

This recipe is so basic, the only other ingredient other than the dressing are tomatoes. You can add other vegetables to the salad such as carrots, bell peppers, olives, cucumbers, etc. I added this recipe to my salad collection to demonstrate how basic and simple a salad can be, yet flavorful when the dressing is added.

You will need the following for this dish:

  • 1 Head Romaine Lettuce
  • 3-4 Small-Medium Tomatoes or 6-8 grape tomatoes halved
  • 1 Carrot washed, peeled and chopped or 6-8 baby carrots cut in half

For the dressing:

  • 1 Lemon
  • 1/4 Cup Extra Virgin Olive Oil
  • Salt to Taste

To prepare this dish, start by combining the lemon juice, olive oil and salt in a small bowl, then mix the ingredients together. Set aside. Wash romaine lettuce thoroughly and chop off the base. Then chop the rest of the lettuce in large chunks. Add the chopped tomatoes, carrots and the dressing. Toss. 

It is recommend that extra virgin olive oil is used for the dressing. Other types of olive oil, especially the blended oils, can be a bit oily and is not as healthy. Extra virgin olive oil may be a bit pricey, but well worth it as it is much more concentrated then the blended versions.
