seared scallops

This is a quick and easy seared scallops recipe. It is perfect even during those busy weeknights. What really makes this dish is the garlic and parsley mixture poured on top of the scallops. It is a great balance of taste between the sweet scallops and raw garlic sauce. 

You will need the following to make this dish:

  • 6 Large Sea Scallops
  • Salt to Taste
  • Handful of parsley
  • 4 Garlic, minced
  • Extra Virgin Olive Oil

What is searing? It is a technique in which the food is cooked at a very high temperature so a caramelized crust forms.

To prepare this dish, you will need to start by pre-heating a skillet on medium to high heat. As the pan is pre-heating, prepare the scallops. Wash and pat dry them with a paper towel. If the scallops are really thick, you can split them in two with a knife. Next, you will need to prepare the sauce. Chop the parsley and mince the garlic and place them in a small bowl. Add some extra virgin olive oil to coat the garlic and parsley. You will know to add more extra virgin olive oil if the mixture is a paste rather than a sauce.

Once the pan is hot, add just enough extra virgin olive oil to coat the pan. Salt the scallops on both sides and add them to the pan. Sear them for about 2-3 minutes a side. 

Once the sea scallops are cooked, place them on a serving platter and drizzle the garlic and parsley mixture on top.

You can serve this on top of pasta or rice!
