Spinach Salad Recipe with Tomatoes and Carrots



Try this easy spinach salad recipe. It only has a few ingredients so it is a great "last minute" salad. I always use the same citrus dressing, so it is a wonderfully refreshing salad, especially during the summer months.

If you buy pre-packaged spinach, the preparation time will go even faster. Otherwise, spinach can take awhile to wash, so keep that in mind when preparing this salad.

Ingredients

*Spinach

*Baby Carrots or 2 Carrots, sliced

*2 Medium Sized Tomatoes, cut for salad size

*1/4 C. Extra Virgin Olive Oil

*1 Large Lemon, juiced

*Salt to taste



Preparation

*Wash the spinach, put in a salad spinner.

*Cut the tomatoes and carrots (unless using baby carrots).

*Place the spinach, tomatoes, and carrots in a salad bowl.

*In a small bowl, mix the extra virgin olive oil, salt, and lemon juice.

*Pour on top of the salad and mix.
