I just love this Tuna Cake recipe! It is a great alternative dish to the well-known traditional crab cake recipe. It is so easy to make, it is a perfect weeknight meal. It can be prepared and cooked in under 30 minutes! What I also like about this dish is how affordable it is. 

There are many varieties of canned tuna with varying prices. For this tuna cake recipe, I purchase the least expensive cans. Just make sure you purchase the ones in water versus oil. I have never used the canned tuna in oil since it may be a bit heavy. I have purchased cans of tuna for under a $1 each. If you are on a very tight budget, check out the store circulars for sales or check on manufacturer coupons for extra deals. This dish is also a versatile recipe in that you can use whatever spices and flavors you like or use the recipe as-is. This meal can be served for brunch, lunch or dinner. 



You will need the following for this Tuna Cake recipe:


  • 2- 6 oz. cans of tuna (preferably canned in water) This will give you 4 small patties.
  • 1/4 C. Bread Crumbs
  • 1 Egg
  • Salt and Pepper to Taste
  • 1 T. Spicy Dijon Mustard
  • Cayenne Pepper to Taste
  • Lettuce
  • Pita Bread
  • Hot Sauce for dipping


Don't want to use hot sauce? Substitute some horseradish!

You can also serve this dish alongside coleslaw, fries and salads!


Preparation

To prepare this dish, start by draining the liquid from the canned tuna. In a large bowl, add the tuna. With a fork, press down on the tuna to shred. Once shredded, add the bread crumbs, slightly beaten egg, salt, black pepper and cayenne pepper. Mix (Using your hands is the best way to do this)! Once mixed, form them into patties and set aside for at least 5 minutes. If you have extra time, set aside for at least 30 minutes as this seems to help the flavors meld together.

Meanwhile, you can start preparing any side dishes and arrange the condiments needed for this meal. Once you are ready to start cooking, add the oil to the pan. Once hot, start adding the patties. Cook for about 4 minutes per side, depending on thickness. Patties should be browned on each side.


Serve

Serve hot.  Cut the pita bread in half, stuff it with some lettuce and add a few patties in there. Have hot sauce to the side for dipping. Also works well with Horseradish.
